Hi Dianna, I'm sorry to hear that the turkey didn't turn out. They should only take a couple minutes to cook on each side, I'm guessing there could be an issue with your meat thermometer? I have to replace mine every couple years or so due when it starts overcooking or undercooking food. When all else fails, overcooked meat can be covered in a sauce, steamed in broth, or cut up and used in a recipe. Jen
